As it ripens further, the flavors concentrate, becoming quite robust. Oddly enough, this cheese used to be made with goat milk, sort of like a Banon without a leaf-wrapping. They are often warmed in the oven and served with a fresh baguette; for extra points, open a bottle of spicy Syrah-based red or Chateauneuf du Pape.
